Salt Baked Pear with Sweet Walnuts
Ingredients
Egg White | 8 pcs |
Pear | 2 pcs |
Salt | 800g |
Walnut | 150g |
Corn Syrup | 125ml |
Maple Syrup | 125ml |
Earl Grey Tea | 100ml |
Vanilla Essence | 1tbsp |
Directions
- Toast the walnuts in the Steam Oven, select "Convection Mode - Without Preheat" and bake for 18 minutes.
- In a large bowl, whisk the egg white until tripled its volume.
- Mix the salt to the egg white until it becomes sticky and clumpy.
- Cut a small part from the bottom of the pear so it can stand.
- Cover and pack the pear with the salt mixture evenly but not too thick.
- Put the pears on a metal tray lined with baking sheet. Put in the Steam Oven and select "Convection Mode - Without Preheat", bake for 45 minutes.
- Pour the corn syrup and maple syrup in a saucepan.
- Use medium heat to heat up the syrup until they are bubbling. Then lower heat for simmering for about 10 minutes.
- Crush the toasted walnuts when it is cooled.
- Stir in the earl grey tea and vanilla essence. Simmer for 3 minutes.
- Mix in the toasted walnuts to the syrup and serve.
- Take out the pears when done. Crack open the salt layer and serve the pear.
